Perfect Buttercream

No cupcake can dazzle without the perfect buttercream. It’s sweet, creamy and luscious. No more information needed.

Ingredients & Method

150 g unsalted butter (softened)

300 g icing sugar

1 tsp vanilla extract

Dash of milk

Food colouring and sugar decorations

1) Sieve the icing sugar into a big mixing bowl. Add the butter, a dash of milk and the vanilla extract.

2) Mix on a low setting with a handheld electric whisk. Beware of the icing sugar cloud! Gradually increase the speed and cream everything together until combined. Have a taste and add more sugar if it’s not sweet enough.

3) Now is the time to add your food colouring if desired. I like to use food colouring powders because they don’t add extra liquid to the buttercream. Mix in your food colouring, adding it in small amounts and increasing to your perfect shade.

4) Spread or pipe onto cupcakes and sprinkle with any sugar decorations or edible glitter you want.
