Perfect Apple and Blackberry Crumble

A fruit crumble is the perfect dessert for a cold day, especially when it’s done right. Serve with custard or vanilla ice cream.

Ingredients & Method

For the crumble:

– 4 oz / 100 g chilled butter

6 oz / 150 g plain flour

– 2 oz / 50 g granulated sugar

– 2 oz / 50 g demerara sugar (plus extra for the top)

Fruit:

– 5 green eating apples OR 3 cooking apples

– Handful of blackberries

1) Preheat the oven to 190 C / Gas 5 / 375 F.

2) Dice the butter and put it in a large mixing bowl. Sieve in the flour. Rub the butter and flour together with your fingertips until you achieve a breadcrumb consistency. Stir in the sugars and set the crumble mixture aside.

3) Peel and core the apples and chop up into bitesize pieces. Place the chopped apple into your dish and top with the blackberries. Sprinkle the crumble on top and pat it down loosely with the back of a spoon.

4) Bake in the oven for 30 minutes or until the top is golden brown. Immediately after taking the crumble out of the oven, sprinkle some more demerara sugar on top. Allow to stand for 5- 10 minutes before serving.
