Now I’m not one to follow trends. But. When it comes to interesting ways to tweak already existing drink concepts? I’m there. This, at its core, is just a strawberry smoothie. But with the addition of a luscious strawberry sauce, a stroke of coconut cream and some boujee supplements, you have got an upgraded smoothie.

Ingredients
According to the Erewhon website, this smoothie contains almond milk, banana, strawberries, avocado, dates, maple syrup, vanilla collagen, vanilla stevia, sea moss, coconut cream and strawberry glaze. Oh, and pretty much every ingredient is ‘organic’.
Now, I don’t know about you, but I don’t have sea moss gel hanging around in my pantry. I don’t have stevia either. But I do have bananas, strawberries, an avocado, collagen powder and vanilla extract. And, frankly, I don’t have the budget to justify buying things like sea moss gel and stevia. So I made Hailey Bieber’s smoothie but the common people’s version. I realise that collagen powder is not something that everyone has at home. But I would say it’s much easier to get hold of than the other more boujee ingredients. And collagen powder is probably the most beneficial supplement out of the others in the Erewhon smoothie, so if you’re going to invest, get this one. When it comes to the coconut cream, it’s not that readily available near where I live, so I just bought coconut milk and have come up with a little hack to get it to stick to the glass. Curious? Read on ;).

Stages
This isn’t a normal smoothie. There are stages to this: decorating your glass, making the strawberry glaze and making the smoothie itself. So, be patient. It’s worth it.
Recipe
Coconut decor
3 tbs coconut milk or cream
Strawberry glaze
4-5 strawberries
1-2 tsp lemon juice
1 tsp maple syrup
Smoothie
1/2 cup almond milk
5-6 frozen strawberries
1/4 avocado
1/2 banana
2 pitted dates
1 tsp vanilla extract
1 scoop or 1 tbs collagen powder
1 tbs maple syrup
3-4 ice cubes
Dollop of greek yoghurt
- Make the strawberry glaze first: Place the strawberries, lemon juice, maple syrup and a tablespoon of water in the blender and blend until combined. Pour into a small jug and set aside. Rinse the blender ready to make the smoothie.
- Decorate your glass: Put your chosen glass in the freezer for 10 minutes. Remove. Dip a pastry brush into the coconut milk and brush it around the inside of your glass, making some kind of abstract art. Put the glass sideways back into the freezer to allow the coconut milk to set on the surface of the glass.
- Make your smoothie: Place the almond milk, banana, strawberries, avocado, dates, maple syrup, collagen powder, vanilla extract and ice cubes in the blender and blend until combined.
- Assemble: Remove your glass from the freezer and pour some of the strawberry glaze into the bottom. The layer should be about 1 cm deep. Pour in the smoothie and top with a dollop of greek yoghurt and another drizzle of the strawberry glaze. Drink.
