Eton mess

The story goes that, in the 1890s during a cricket match at Eton College, a strawberry meringue dessert (a pavlova?) was dropped. Instead of wasting it and throwing it away, they just served it as the mess that it was; hence ‘Eton Mess’. It was probably one of the best accidents to have ever happened. I’m not giving measurements for this recipe because I feel such a messy dessert needs to be measured by the heart.

Ingredients

Meringues (you could bake them yourself but also just save yourself the effort and buy them)

Whipped cream

Variety of berries, chopped (frozen is fine if thawed)

Icing sugar

Method

Stir a spoonful of icing sugar into the cream. Next, crush up the meringues and add them into the whipped cream. Add your chosen berries and stir through – don’t over-mix though because you want a ripply pink and white effect. Serve in pretty glasses and enjoy.
