I’ve been on a journey recently striving to find the best granola to be found in a supermarket. Then nothing was really fitting the bill, so I just decided to make it myself. And it’s so easy! Basically, just add whatever you want.
Ingredients
350g oats (a mix of regular and jumbo oats)
Approx 4 tablespoons of oil (maybe more)
Approx 3 tablespoons maple syrup or honey
Mix-ins that I used:
Raisins
Flaked almonds
Dried apricots
Dates
Freeze-dried berries
Chocolate chips
Method
- Preheat the oven to 150 C or Gas Mark 2. Heat the oil and maple syrup in a pan until just warm.
- Add in the oats and mix to combine.
- Put the oats onto a baking tray with a rim. Oil the back of a spoon and press the oats well into the pan.
- Bake the oats in the oven for approximately 25 mins. Keep an eye on them though, and take them out when they’re golden. Leave to cool completely.
- Chop up your mix-ins as desired.
- Break up the granola slab – a lot of it will break up into individual oats again but that’s okay. Place the oats into a bowl and add in your mix-ins.
- Place in a jar or airtight container. Eat your granola on its own, on top of pancakes to add a bit of texture or on top of a smoothie bowl – your choice!
