The rumours are true: you, in fact, can make a cake in the microwave. In a mug. For a long time, I thought this was cutting corners to get a mediocre product. And to be fair, that’s what this is. In the best way. It’s nothing fancy. It’s just a basic sweet treat to fill that need. And I have been converted. Sometimes all you need is one little sweet treat and nothing more. And you need it NOW. So here goes…here is one recipe for ONE single chocolate mug cake. Double if you’re with a friend.

Ingredients
2 tbs plain flour
1 tsp cocoa powder
2 tbs caster sugar
2 tbs oil (plus extra for greasing)
2 tbs milk
1/4 tsp baking powder
1/2 beaten egg
Pinch of salt
A few cubes of chocolate
Method
- Combine everything together in a jug until you reach a smooth chocolate batter consistency.
- Drizzle a little oil in your mug and swirl it around.
- Pour the batter into the mug. I should go halfway up.
- Microwave for 1 minute and 30 seconds.
- Check to see if it’s springy to the touch or if a skewer comes out clean. If not, put it back in and microwave at 30 second intervals until it’s cooked.
- I like to push a couple of cubes of chocolate into the hot mug cake to make it saucy. Enjoy with ice cream!
