Summer is on the way and there’s nothing cooler than a nice, refreshing -healthy- slushy! This drink has mango, pineapple and passion fruit. Blend them with ice and you’ve got a lovely icy slushy.

The Best Mac and Cheese
It’s no secret among my friends and family that I love cheese. LOVE IT. So, making an entire dish based on cheese and carbs? I am THERE. I’m not American, so maybe my friends over the other side of the pond may disagree with this recipe, seeing as it’s their baby. But I think this is a pretty good recipe. It’s cheesy, creamy, and indulgent. What’s not to love?! You can eat this dish purely as it is or add other things to it. I chose ham and cauliflower. Your call.
Watermelon and Strawberry Smoothie
It turns out that putting watermelon in a smoothie is a really good idea. Watermelons are huge beasts of fruit, so when there’s only two people in the house to consume said watermelon, it helps to get a little creative as to how you use it. As we all know, watermelon is great for hydration as it is approximately 92% water! So if you don’t like drinking water, having a bit of watermelon could help you out (though you should be drinking water of course).
Midweek Veggie Soup
On a cool day, warm up with this light classic soup. Top with croutons and a grating of cheese. Delish.
Pesto Spatchcock Roast Chicken
Roast chicken is one of the best midweek meals, not only because it tastes so good, but also because one cooking sesh can give you multiple meals! And chicken is so versatile that you can pretty much do anything with the leftovers. For a summer twist, I added pesto to my usual butter coating and topped the bird with pine nuts a few minutes before the end of cooking. Enjoy with homemade sweet potato wedges and salad.
Cranberry and Raspberry Fruit Slushy
When the sun is out, we all reach for something ice-cold. And there’s nothing better than a fruit slushy. It’s cold, it has that satisfying thick icy texture and it just might be healthier than that ice cream cone you normally go for. If like me, you crave to relive your childhood Slush Puppy experiences but in a less artificial, tongue-staining way, this one’s for you!
