But, you can succeed if you whack your oven up to the max and improvise with an upside-down baking tray! Cream of tomato soup
This soup is a staple. It’s simple, it’s classic, everyone likes it. I remember growing up eating the famous tinned version, but now I live abroad, I have to make it myself if I want it. And I have to say, this one tastes better than the Heinz version. Ingredients 200g vine cherry tomatoes 1Continue reading “Cream of tomato soup”
Sweet and Sour Chicken Balls
If you grew up in the UK, you’ll be familiar with a good old British Chinese takeaway. And with all that choice on a Chinese menu, what did us 90s kids order? Chicken balls and sweet and sour sauce, of course!
British Beer-Battered Fish & Chips
Fish and chips is a British classic. But it’s also really easy to make! Just make sure you use actual beer in your batter – that makes all the difference.
The Best Mac and Cheese
It’s no secret among my friends and family that I love cheese. LOVE IT. So, making an entire dish based on cheese and carbs? I am THERE. I’m not American, so maybe my friends over the other side of the pond may disagree with this recipe, seeing as it’s their baby. But I think this is a pretty good recipe. It’s cheesy, creamy, and indulgent. What’s not to love?! You can eat this dish purely as it is or add other things to it. I chose ham and cauliflower. Your call.
Midweek Veggie Soup
On a cool day, warm up with this light classic soup. Top with croutons and a grating of cheese. Delish.
Pesto Spatchcock Roast Chicken
Roast chicken is one of the best midweek meals, not only because it tastes so good, but also because one cooking sesh can give you multiple meals! And chicken is so versatile that you can pretty much do anything with the leftovers. For a summer twist, I added pesto to my usual butter coating and topped the bird with pine nuts a few minutes before the end of cooking. Enjoy with homemade sweet potato wedges and salad.
Oven-Baked Crispy Seaweed
Who doesn’t love a bit of crispy seaweed with their Chinese takeaway? Not you, you say? Okay, you’re weird. But the rest of you … I have a treat for you. Lately, I’ve been missing a good British Chinese takeaway (I know this sounds weird but if you’re a fellow Brit, you’ll know what IContinue reading “Oven-Baked Crispy Seaweed”
Naan Bread
My boyfriend is from India, so you can assume I was a little nervous to make him naan bread. I got this recipe originally from the BBC and I’m writing it here so I can remember it for my own reference. This is my Baking Cupboard Journal after all. I did tweak the recipe aContinue reading “Naan Bread”
