Winter spice cupcakes
At Christmas time, it’s normally all about mince pies and fruit cake where I’m from, but sometimes I fancy something a bit different. These spicy, gingerbready cupcakes with sweet vanilla buttercream icing are the perfect alternative if you don’t like the typical dried fruit-based bakes at this time of year. They have all the spicesContinue reading “Winter spice cupcakes”
Chocolate avocado smoothie
This smoothie feels like such a treat yet it’s so good for you! I tend to make this in my luteal phase and I need a boost of happy hormones and comfort. And if you use over 70% dark chocolate, it’s food for you, right? This drink has energy and potassium from the banana, healthy fat from the avocado, protein from greek yoghurt and sweetness from maple syrup. Let’s also not forget the power house that is oats! Make this smoothie; you shall not regret it.
Citrus drizzle cake
This is an upgrade to the regular 4/4/4/2 cake ratio I normally do. I added soured milk to the batter to create a more tender texture, and I have to say that I achieved what I set out to do. The sourness also adds to the citrus flavour of the cake, so it’s a win-win!Continue reading “Citrus drizzle cake”
Crepe pancakes
You’re either Team Crepe or Team American Pancake. Or both. I love both for different reasons, but a crepe-style pancake will always have the edge for me because these are the types of pancakes us Brits eat on Shrove Tuesday. Ingredients 125g plain flour 1tbs caster sugar Pinch of salt 2 eggs 270ml milk ofContinue reading “Crepe pancakes”
Strawberry jam
Making jam is so easy. Yet very easy to mess up; trust me, I’ve made many a batch of overcooked candied jam. This recipe gives you a jam that’s just right with a clever little hack. What’s the hack? To make jam set, you need pectin, which is sometimes naturally available in some fruits. UnfortunatelyContinue reading “Strawberry jam”
Scotch pancakes
These are basically American pancakes but a smaller version. In the UK, we also call these drop scones or Scotch pancakes. You can put whatever you want on top; my preference is maple syrup and some berries. Notes *This recipe involves making a faux buttermilk, so don’t worry if the milk looks lumpy when youContinue reading “Scotch pancakes”
Oat and raisin cookies
I usually opt for a chocolate chip cookie, but these oat and raisin cookies are a refreshing change. They’re also so comforting with a cup of tea. And with all those oats, you can have one for breakfast, right?
New York Cheesecake
I have had the strongest craving for a good slice of cheesecake lately, so I did what any baker would do … I baked a cheesecake.
Cupcakes
Cupcakes was the first thing I learnt to make with my Mum as a child. And whipping up a batch is still a very fun experience; though I try not to eat so much of the icing nowadays. Cupcakes can be as messy or neat as you want. Sometimes, I go for a nice swirl of buttercream, but sometimes I just crave a cake overflowing with glace icing and sprinkled with all the sprinkles in my baking cupboard.
