At Christmas time, it’s normally all about mince pies and fruit cake where I’m from, but sometimes I fancy something a bit different. These spicy, gingerbready cupcakes with sweet vanilla buttercream icing are the perfect alternative if you don’t like the typical dried fruit-based bakes at this time of year. Citrus drizzle cake
This is an upgrade to the regular 4/4/4/2 cake ratio I normally do. I added soured milk to the batter to create a more tender texture, and I have to say that I achieved what I set out to do. Crepe pancakes
You’re either Team Crepe or Team American Pancake. Or both. Notes *This recipe involves making a faux buttermilk, so don’t worry if the milk looks lumpy when youContinue reading “Scotch pancakes”
Oat and raisin cookies
I usually opt for a chocolate chip cookie, but these oat and raisin cookies are a refreshing change. They’re also so comforting with a cup of tea. And with all those oats, you can have one for breakfast, right?
Perfect Apple and Blackberry Crumble
Fruit crumble is a great dessert on a cold day. I love mine with apple and blackberries, served with vanilla ice cream.
